- 2 egg whites
- ⅔ cup sugar (134 g)
- ½ tsp vanilla extract
- 1 cup packed ground almond (about 145 g)
- 2 tbsp flour
- whole almonds
- food colouring optional
Preheat oven to 350°F.
Beat egg whites, sugar and vanilla extract until soft peaks form.
Add in the ground almond and flour and beat on low until combined.
Mix in small amounts of food colouring at a time, until the desired colour is reached.
Transfer the batter to a piping bag fitted with a large star tip.
Pipe rounds about 1½ inches wide onto a lined baking sheet. Insert an almond into the center of each cookie.
Bake for about 10 minutes, until just slightly browned on the edges.
