white italian rice

cup
grated parmigiano cheese
1
egg
cubed mozzarella
1 cube per rice ball
1
cup
plain breadcrumbs
vegetable oil for frying
Instructions
Cook your rice with salted water to al dente and drain. You can cook the rice ahead of time and once cooled store it in the fridge until ready to use.
In a medium bowl, combine the rice, parmigiano cheese, and egg. Use your hands to thoroughly combine the mixture.
Form each rice ball squeezing it firmly around one cube of mozzarella in the center.
Dip each rice ball in the breadcrumbs. Shake off any excess.
Heat the oil in a deep frying pan. Once the oil is hot enough, add your rice balls and fry until golden brown.
Use a slotted spoon to remove the fried rice balls and transfer them to a paper towel-lined plate.
Serve warm.
