Pistachio Snowballs

- 225 g butter room temperature
- 35 g powdered sugar plus more for rolling
- 240 g flour
- 160 g shelled pistachios toasted, finely chopped
- ¼ tsp salt
Finely chop the pistachios using a knife or a food processor. Mix the pistachios, flour, and salt. Set aside.
In a mixer beat the butter and the sugar until smooth.
Add the dry ingredients and mix on low speed until just combined.
Cover with plastic wrap and chill for at least 1 hour.
Preheat the oven to 350°F (175℃).
Scoop and roll the dough into 1 inch sized balls. Roll each of them in powdered sugar before placing them on a parchment lined baking sheet about 2 inches apart.
Bake for 10 minutes. Allow to cool slightly before transferring to a wire rack.
