Pistachio Snowballs

Ingredients
  

  • 225 g butter room temperature
  • 35 g powdered sugar plus more for rolling
  • 240 g flour
  • 160 g shelled pistachios toasted, finely chopped
  • ¼ tsp salt

Instructions
 

  • Finely chop the pistachios using a knife or a food processor. Mix the pistachios, flour, and salt. Set aside.
  • In a mixer beat the butter and the sugar until smooth.
  • Add the dry ingredients and mix on low speed until just combined.
  • Cover with plastic wrap and chill for at least 1 hour.
  • Preheat the oven to 350°F (175℃).
  • Scoop and roll the dough into 1 inch sized balls. Roll each of them in powdered sugar before placing them on a parchment lined baking sheet about 2 inches apart.
  • Bake for 10 minutes. Allow to cool slightly before transferring to a wire rack.
