Lemon Crinkle Cookies

Lemon crinkle cookies are a delightful twist on the classic crinkle cookie, boasting a vibrant citrus flavor and irresistible soft texture. These charming treats feature a crackled appearance, making them as visually appealing as they are delicious.

Ingredients
  

  • 220 g all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • 175 g granulated sugar
  • 2 eggs
  • 55 g vegetable oil
  • 2 tbsp freshly squeezed lemon juice
  • 1 tbsp freshly grated lemon zest
  • 1 tsp vanilla extract
  • Powedered sugar for rolling

Instructions
 

  • Mix together the flour, baking powder and salt. Set aside.
  • In a large bowl, beat the eggs and sugar until light and fluffy. Slowly mix in the oil, followed by the lemon juice, lemon zest and vanilla extract.
  • Mix in dry ingredients until a dough forms. Chill for at least 1 hour.
  • Preheat the oven to 350°F (175℃).
  • Scoop and roll the dough into 1 inch sized balls. Roll each of them in powdered sugar and place them on a parchment lined baking sheet, 2 inches apart.
  • Bake for 10-12 minutes. Allow to cool slightly before transferring to a wire rack.
