Lemon Crinkle Cookies
Lemon crinkle cookies are a delightful twist on the classic crinkle cookie, boasting a vibrant citrus flavor and irresistible soft texture. These charming treats feature a crackled appearance, making them as visually appealing as they are delicious.
- 220 g all-purpose flour
- 1 tsp baking powder
- ¼ tsp salt
- 175 g granulated sugar
- 2 eggs
- 55 g vegetable oil
- 2 tbsp freshly squeezed lemon juice
- 1 tbsp freshly grated lemon zest
- 1 tsp vanilla extract
- Powedered sugar for rolling
Mix together the flour, baking powder and salt. Set aside.
In a large bowl, beat the eggs and sugar until light and fluffy. Slowly mix in the oil, followed by the lemon juice, lemon zest and vanilla extract.
Mix in dry ingredients until a dough forms. Chill for at least 1 hour.
Preheat the oven to 350°F (175℃).
Scoop and roll the dough into 1 inch sized balls. Roll each of them in powdered sugar and place them on a parchment lined baking sheet, 2 inches apart.
Bake for 10-12 minutes. Allow to cool slightly before transferring to a wire rack.
