- 2 egg whites
- 135 g sugar
- ½ tsp vanilla extract
- 145 g ground almond almond flour
- 2 tbsp flour
- green food colouring
Preheat oven to 350°F (175°C).
In a mixer beat the egg whites, sugar and vanilla extract until soft peaks form.
Add in the ground almond and flour and mix on low until combined.
Mix in small amounts of food colouring at a time, until the desired colour is reached.
Transfer the batter to a piping bag fitted with a large star tip.
Pipe wreath-shaped rounds about 1½ inches wide onto a lined baking sheet. Insert a dried cranberry at the top of each cookie.
Bake for about 10 minutes, until just slightly browned on the edges.
