Ingredients
  

  • 2 egg whites
  • cup sugar (134 g)
  • ½ tsp vanilla extract
  • 1 cup packed ground almond (about 145 g)
  • 2 tbsp flour
  • whole almonds
  • food colouring optional

Instructions
 

  • Preheat oven to 350°F.
  • Beat egg whites, sugar and vanilla extract until soft peaks form.
  • Add in the ground almond and flour and beat on low until combined.
  • Mix in small amounts of food colouring at a time, until the desired colour is reached.
  • Transfer the batter to a piping bag fitted with a large star tip.
  • Pipe rounds about 1½ inches wide onto a lined baking sheet. Insert an almond into the center of each cookie.
  • Bake for about 10 minutes, until just slightly browned on the edges.
