Ingredients
  

  • 2 oranges organic
  • 2 eggs separated
  • 100 g sugar
  • 80 g neutral oil
  • 140 g all-purpose flour
  • 60 g almond flour
  • 2 tsp baking powder
  • 1 tsp salt
  • Icing sugar to glaze

Instructions
 

  • Preheat oven to 350°F (180°C). Butter and flour a 9 inch bundt pan. Set aside.
  • Take one orange and slice it into quarters. Remove the inner white pieces and any seeds. Blend the rest until smooth. Set aside.
  • Beat the egg whites until stiff peaks. Set aside.
  • In a large bowl beat the egg yolks and sugar.
  • Slowly mix in the oil. Then mix in the blended orange.
  • Mix in the two flours, baking powder and salt until just combined.
  • Gently fold in the egg whites.
  • Pour the batter into the prepared pan. Bake for 25-30 minutes, or until a toothpick comes out clean.
  • Once completely cooled, combine the juice from the other orange with enough icing sugar to get a thick icing. The amount of icing sugar will depend on the amount of juice from the orange. Pour the icing over the cake.
