Anything peanut butter and chocolate must be good right? These are crunchy on the outside, but still a little soft on the inside. I used crunchy peanut butter which I 10/10 recommend.
Peanut Butter Cookies
Ingredients
- 1½ cups (180g) flour
- 1 tsp baking soda
- ⅛ tsp salt
- ½ cup (113g) butter room temperature
- ½ cup (128g) natural peanut butter
- 1 cup (200g) sugar divided
- ½ cup (85g) brown sugar packed
- 1 egg
- 1 tsp vanilla extract
- dark chocolate wafers to top each cookie
Instructions
- Preheat oven to 375°F.
- In a small bowl stir flour, baking soda, and salt.
- In a large bowl beat the butter and peanut butter until smooth.
- Beat in ½ cup of sugar and the brown sugar.
- Beat in the egg and vanilla.
- Reduce speed and gradually add flour.
- Shape dough to 1 inch balls.
- Roll each ball in the remaining sugar and place on an ungreased baking sheet 2 inches apart.
- Bake for 10 minutes or until lightly coloured.
- Remove and immediately press a chocolate wafer into the center of each cookie.
