Anything peanut butter and chocolate must be good right? These are crunchy on the outside, but still a little soft on the inside. I used crunchy peanut butter which I 10/10 recommend.

Peanut Butter Cookies

Ingredients
  

  • cups (180g) flour
  • 1 tsp baking soda
  • tsp salt
  • ½ cup (113g) butter room temperature
  • ½ cup (128g) natural peanut butter
  • 1 cup (200g) sugar divided
  • ½ cup (85g) brown sugar packed
  • 1 egg
  • 1 tsp vanilla extract
  • dark chocolate wafers to top each cookie

Instructions
 

  • Preheat oven to 375°F.
  • In a small bowl stir flour, baking soda, and salt.
  • In a large bowl beat the butter and peanut butter until smooth.
  • Beat in ½ cup of sugar and the brown sugar.
  • Beat in the egg and vanilla.
  • Reduce speed and gradually add flour.
  • Shape dough to 1 inch balls.
  • Roll each ball in the remaining sugar and place on an ungreased baking sheet 2 inches apart.
  • Bake for 10 minutes or until lightly coloured.
  • Remove and immediately press a chocolate wafer into the center of each cookie.
