Orecchiette with Rapini & Sausage

Ingredients
  

  • 350 g orecchiette
  • 300 g rapini
  • 300 g sausage out of casing
  • 40 g white wine
  • 1 clove garlic
  • 30 g olive oil
  • Red pepper flakes
  • Salt
  • Pepper
  • Parmigiano to serve

Instructions
 

  • Boil the rapini in salted water for about 7 minutes.
  • Meanwhile, heat the olive oil and garlic in a pan over medium heat.
  • Add the sausage and cook while separating with a wooden spoon.
  • Once sausage begins to brown, add the white wine.
  • Use a slotted spoon to remove the rapini from the boiling water and add it to the sausage. Add salt, pepper and red pepper flakes.
  • Using the same water, cook the pasta.
  • Remove cooked pasta with slotted spoon and toss in the pan. Add some pasta water to the pan if needed. Stir for a couple of minutes.
  • Serve immediately with grated parmigiano.
