A version of strawberry cheesecake that will help you beat the heat!

Frozen Strawberry Cheesecake

Ingredients
  

  • 8 oz cream cheese softened
  • ¼ cup sugar
  • 1 can frozen berry juice concentrate thawed
  • 1 cup crushed strawberries
  • 8 oz whipped topping thawed
  • sliced strawberries to top the cake
  • chocolate chip cookies to line the bottom of the pan

Instructions
 

  • Line a 9 inch springform pan with chocolate chip cookies. You may have to break some of the cookies to fill in the gaps.
  • Beat the cream cheese and sugar until smooth.
  • Slowly beat in the berry juice and crushed strawberries.
  • Fold in the whipped topping until fully combined.
  • Pour the mixture over the cookies in the pan.
  • Freeze for at least 6 hours or until firm.
  • Top with sliced fresh strawberries before serving.
