A version of strawberry cheesecake that will help you beat the heat!
Frozen Strawberry Cheesecake
Ingredients
- 8 oz cream cheese softened
- ¼ cup sugar
- 1 can frozen berry juice concentrate thawed
- 1 cup crushed strawberries
- 8 oz whipped topping thawed
- sliced strawberries to top the cake
- chocolate chip cookies to line the bottom of the pan
Instructions
- Line a 9 inch springform pan with chocolate chip cookies. You may have to break some of the cookies to fill in the gaps.
- Beat the cream cheese and sugar until smooth.
- Slowly beat in the berry juice and crushed strawberries.
- Fold in the whipped topping until fully combined.
- Pour the mixture over the cookies in the pan.
- Freeze for at least 6 hours or until firm.
- Top with sliced fresh strawberries before serving.
