Fried Zucchini Flowers

Ingredients
  

  • 24 zucchini flowers
  • 3 eggs
  • ¼ cup grated parmigiano cheese
  • ¾ cup flour
  • ½ cup beer/sparkling water
  • high heat oil for pan frying ex. canola oil

Instructions
 

  • Prep the flowers: carefully remove the inner stamen, then carefully wash and dry the flowers.
  • Make the batter: Whisk the eggs and grated cheese. Whisk in the flour. Then whisk in the beer/sparkling water.
  • Add oil to a frying pan – enough to come ¼ inch up the pan. Heat the oil over medium – high heat.
  • Meanwhile have a plate lined with paper towel ready on the side.
  • Drop some batter into the oil. If it quickly sizzles, you know the oil is ready.
  • Dip the flowers into the batter and place them in the oil. Cook for 2-3 minutes until golden in colour and then flip. Cook another 1-2 minutes.
  • Remove the flowers from the pan and place on the paper towel lined plate.
