Crispy Baked Bruschetta

Ingredients
  

  • 1 baguette or any rustic bread
  • 300 g (2 cups) cherry tomatoes
  • 1 garlic clove mashed
  • 2 tbsp olive oil
  • 1 tsp balsamic vinegar
  • salt to taste
  • pepper to taste
  • basil leaves chiffonade
  • 60 g mozzarella shredded

Instructions
 

  • Preheat the oven to 350°C.
  • Slice the baguette and place on a parchment lined baking sheet.
  • Drizzle the slices with olive oil and bake for about 8-10 minutes.
  • Slice the cherry tomatoes into halves or quarters and place them in a large bowl. Add the mashed garlic, olive oil, balsamic vinegar, salt and pepper. Mix well to combine.
  • Add the basil and mix again to combine.
  • Once the bread comes out of the oven, top the slices with the tomato mixture.
  • Top with mozzarella and place them back in the oven. Turn on the broiler and bake until the cheese is melted.
